Arroz con Pollo

1  chicken, 3 1/2-4lbs., cut into 8 pieces, skin removed  (I use 6 breast)

2  red &/or green peppers, cut into strips (I use large ones or a third one)

1 cup black olives, about 4 oz. cut crosswise into thirds (I use 2 cans chopped olives)

1 onion, halved, cut into slices (I use a large onion)

1 1/2 tsp. ground cumin (I use more)

1 tsp. salt

1/2 tsp. cayenne pepper ( I use more)

1/2 tsp. turmeric ( I use more)

1/2 tsp. pepper

3/4 cup chicken broth

3/4 cup uncooked rice (I prefer the rice cooked separte and I cook more)

Arrange chicken in 4-qt. crockpot; top with peppers, olives, onion, cumin, salt, cayenne, turmeric and pepper.  Pour broth over.  On low setting cook 8 hours.  Turn to high setting; stir in rice.  Cover; continue cooking until rice is tender and chicken is no longer pink near bone, 40-45 minutes.

Makes 4 servings (unless you use the 6 breast- then it makes enough for 6–make sure you add more seasoning if you go with 6 breast since that is a lot of meat and it needs more seasoning)

 

Tuscan Soup

2  3/4 – cups Chicken Stock  ( I use about 8 cups)

1/4 cup – Heavy Cream  (The whole carton (small) )

1 -Large Onion

1 -Medium Potato chopped (I use more potatoes – 1 per person (depending on size)

2  -Cups Kale, chopped (The whole bundle)

1/2  -lb. Spicy Italian Sausage ( I use 1 -lb.  &  I used bulk instead of links)

1/4  -Tsp. Salt ( I leave out)

1/4 -Tsp. Red pepper flakes

Brown the sausage in the pot, then remove a put on paper towels to drain some of the fat.  Add about  1-Tbs. of olive  oil to pot if needed and put in the chopped onions (or if you prefer .. very thinly sliced), cook until slightly golden.

While doing this,  heat the broth and cream in a separate pan over medium heat.   Slice the unpeeled potatoes into 1/4 inch slices then quarter the slices (I prefer this way to chopped).

When the onions are finished add the sausage and pour in a bit of the broth to deglaze the bottom of the pot.  After scraping the pot clean with a spoon, add the rest of the liquid, potatoes, and kale, as well as the salt and red pepper flakes.

Let the soup simmer for about 2 hours or longer if you have time (it will be better).

*** Sometimes at the end I might take the potato masher and mash some of the potatoes.

BBQ Grill Cubed Sirloin Steak with Jalapeno BBQ Sauce

Ingredients

  • 1 pound (4 pieces) “cubed” sirloin steak
  • 2 cups your favorite hickory smoked BBQ sauce
  • 1/4 cup scallions, chopped
  • 2 tablespoons chopped fresh garlic
  • 1 tablespoon chopped fresh rosemary leaves
  • 1 whole jalapeno pepper, sliced thin
  • 1/4 cup canola oil, plus 2 tablespoons, plus more oil for grill
  • 1 large Vidalia onion, sliced 1/4-inch thick
  • 4 kaiser rolls, split in half
  • 2 tablespoons butter, melted
  • 8 slices Cheddar
  • Coleslaw and dill pickles, as an accompaniment

Directions

Pierce the steaks with a fork to make numerous holes.

In a medium bowl, mix BBQ sauce, scallions, garlic, rosemary, and jalapeno pepper. Remove 1/2 cup of mixture and reserve for rolls. Add 1/4 cup oil and the steaks to the bowl and let marinate for 30 minutes, or up to 2 hours.

Preheat grill to medium and oil grates.

Place steaks on the oiled grill and grill 3 to 4 minutes on each side. Remove steaks to a plate and set aside.

Rub grill with 2 tablespoons oil. Grill onions until desired char marks are made. Brush the cut sides of the rolls with melted butter and toast (or grill); set aside. Top each steak with 2 slices of cheese and some grilled onions. Place the steaks back on the grill, and cover until cheese is melted. Spread toasted buns with the 1/2 cup of reserved sauce, if desired, and place the steaks on the bottom half of the rolls. Cover with the top halves .

Grilled Taco-Spiced Chicken

(From the Betty Crocker Website)

Total Time: 25 min
Makes: 4 servings

2 tablespoons taco seasoning mix
1 teaspoon dried oregano leaves
4 boneless skinless chicken breasts (about 1 1/4 lb)
1 tablespoon olive or vegetable oil
1/4 cup barbecue sauce
2 tablespoons chili sauce
1/2 teaspoon ground cumin
1. Heat gas or charcoal grill. In shallow bowl, mix taco seasoning mix and oregano. Brush chicken with oil; sprinkle with taco seasoning mixture.
2. Place chicken on grill over medium heat. Cover grill; cook 10 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).
3. Meanwhile, in small microwavable bowl, mix barbecue sauce, chili sauce and cumin. Cover; microwave on High 30 to 60 seconds or until hot. Serve sauce over chicken.
(I did it in the oven)

Oven Directions: Heat oven to 375°F. Line shallow baking pan with foil or spray with cooking spray. Place coated chicken in pan. Bake 25 to 30 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).

High Altitude (3500-6500 ft):Cook chicken covered over medium-low heat 15 to 20 minutes.

  3. Oh boy, found a lot of double instructions for some reason, I reread it and I think I got all the kinks out of it now. You might want to resend this to Jackie if you copied and paste it in an email, if you sent her my blog address then she will see the corrected version. Boy that was scary, I might have to take some time and look at all my recipes and see if there where glitches in them too, yikes.
